Abstract
Sesamol is a natural antioxidant with good prospect in food and medicine industry. But its poor water solubility limits its application. In this study, the complex of sesamol and HP-β-CD was prepared to improve the water solubility of sesamol. The physicochemical properties of the complex were investigated by ultraviolet-visible spectrometry (UV), infrared spectrometry (IR), differential scanning calorimetry (DSC) and X-ray diffractometry (XRD). The result showed that sesamol in the complex had been molecularly dispersed in the HP-β-CD matrix, not forming a new compound. And the complex was an effective scavenger of DPPH radicals. A linear correlation between concentration of the complex and reducing power was also observed.
