Maltol (3-hydroxy-2methyl-4H-pyran-4-one) is neutral, heterocyclic aroma compound and widely known as food additive, antioxidant, metal ions chelator was isolated from leaves of Abies pindrow by column chromatography and its crystal structures and molecular structure was found using x-ray structure analysis and its crystal structure has been determined (C6H6O3).
