Antioxidants from plants origin are considered as a promising source of biologically active substances when compared to synthetic agents who are accompanied with a number of side effects. Three botanical extracts of Acorus calamus (sweet flag), Prunus persica (peach) and Sausskurea lappa (kuth) were characterized for their antioxidant properties. Methanolic extract was prepared and concentrated by rotary evaporated. The antioxidant values were measured for freshly prepared extract of each plant. Then these extracts were kept at four different temperatures i.e. 8 oC, 25 oC, 40 oC and 40 oC+75% RH for the period of 90 days and their antioxidant readings were taken at the time interval of 30, 60 and 90 days. DPPH (2,2-diphenyl-1-picrylhydrazyl) assay was used to evaluate antioxidant activities of various botanical extracts,IC50 values was found (X, Y and Z µg/mL) to A. calamus, P. persica (Fruit) and S. lappa, respectively. These botanical extracts showed good antioxidant properties and also little decrease in the antioxidant value with the increasing temperature and time. Prunus.persica shows highest antioxidant activity. So, by this study it might be said that the above mentioned, botanical extracts show stable and good antioxidant values at different temperatures and extended time period.
