Effect of boiling, pressure cooking and germination on the nutritional and antinutrients content of cowpea (Vigna unguiculata)
The study was conducted to investigate the effect of boiling, pressure cooking and germination on the proximate, nutrients, amino acids and anti-nutrients content of cowpea (Vigna unguiculata).
